Beef Liver and Onions

Here’s a classic recipe for Beef Liver and Onions:

### Ingredients:
– 1 lb beef liver
– 2 large onions, thinly sliced
– 1 cup milk (for soaking the liver)
– 1/2 cup all-purpose flour
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon paprika (optional)
– 4 tablespoons butter
– 2 tablespoons olive oil
– Fresh parsley for garnish (optional)

### Instructions:

1. **Prepare the Liver:**
– Rinse the liver slices under cold water.
– Place the liver in a bowl and cover with milk. Let it soak for at least 30 minutes to help remove any bitterness.
– After soaking, drain the milk and pat the liver slices dry with paper towels.

2. **Prepare the Onions:**
– In a large skillet, heat 2 tablespoons of butter over medium heat.
– Add the sliced onions and cook until they are soft and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.
– Once done, remove the onions from the skillet and set aside.

3. **Prepare the Liver:**
– In a shallow dish, mix the flour, salt, pepper, and paprika (if using).
– Dredge the liver slices in the flour mixture, shaking off any excess.

4. **Cook the Liver:**
– In the same skillet, add the remaining 2 tablespoons of butter and the olive oil over medium-high heat.
– Once the butter is melted and the skillet is hot, add the liver slices.
– Cook the liver for about 3-4 minutes on each side, or until browned and cooked through. Avoid overcooking as it can make the liver tough.

5. **Combine and Serve:**
– Reduce the heat to low and return the caramelized onions to the skillet, mixing them with the liver.
– Cook for an additional 1-2 minutes to heat everything through.
– Garnish with fresh parsley if desired, and serve immediately.
