Cherry Cheesecake Recipe

Here’s a delicious recipe for Cherry Cheesecake:

### Ingredients:

**Crust:**
– 1 1/2 cups graham cracker crumbs
– 1/4 cup granulated sugar
– 1/2 cup unsalted butter, melted

**Filling:**
– 3 packages (8 oz each) cream cheese, softened
– 1 cup granulated sugar
– 3 large eggs
– 1 teaspoon vanilla extract
– 1 cup sour cream

**Topping:**
– 1 can (21 oz) cherry pie filling

### Instructions:

1. **Prepare the Crust:**
– Preheat your oven to 325°F (163°C).
– In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
– Press the mixture firmly into the bottom of a 9-inch springform pan.
– Bake the crust for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

2. **Prepare the Filling:**
– In a large mixing bowl, beat the cream cheese until smooth and creamy.
– Gradually add the sugar and continue beating until well blended.
– Add the eggs one at a time, beating well after each addition.
– Mix in the vanilla extract and sour cream until just combined.

3. **Bake the Cheesecake:**
– Pour the cream cheese mixture over the cooled crust.
– Bake in the preheated oven for 55-60 minutes, or until the center is almost set but still slightly jiggly.
– Turn off the oven and leave the cheesecake inside with the door slightly open for about an hour. This helps prevent cracking.
– Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.

4. **Add the Cherry Topping:**
– Once the cheesecake is thoroughly chilled, spread the cherry pie filling evenly over the top.
– Return the cheesecake to the refrigerator for another hour before serving to allow the topping to set.

Enjoy your Cherry Cheesecake!
