Cream Cheese Spinach Puffs

Ingredients:

1 package (10 oz) frozen chopped spinach, thawed and drained
1 package (8 oz) cream cheese, softened
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 teaspoon onion powder
Salt and pepper to taste
2 sheets puff pastry, thawed
1 egg, beaten (for egg wash)
Sesame seeds or poppy seeds (optional, for garnish)

Directions:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the thawed and drained spinach, softened cream cheese, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, onion powder, salt, and pepper. Mix until well combined.
Roll out one sheet of puff pastry on a lightly floured surface. Cut the pastry into squares (about 3×3 inches).
Place a spoonful of the spinach and cheese mixture in the center of each pastry square.
Fold the corners of the pastry squares over the filling to create a puff shape. Press the edges to seal.
Repeat with the remaining puff pastry sheet and filling.
Place the spinach puffs on the prepared baking sheet.
Brush the tops of the puffs with beaten egg and sprinkle with sesame seeds or poppy seeds, if desired.
Bake in the preheated oven for 15-18 minutes, or until the puffs are golden brown and puffed up.
Remove from the oven and let cool slightly before serving.
