Here’s a flavorful recipe for Garlic Roasted Chicken that’s sure to impress!

Garlic Roasted Chicken

Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 1 head of garlic (about 10-12 cloves), peeled and smashed
  • 1 lemon, halved
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • Salt and pepper, to taste
  • Optional: Vegetables for roasting (carrots, potatoes, onions)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Chicken:
    • Pat the chicken dry with paper towels. Season the inside and outside generously with salt and pepper.
  3. Stuff the Chicken:
    • Place the smashed garlic cloves and lemon halves inside the cavity of the chicken. Add half of the rosemary and thyme inside as well.
  4. Season the Outside:
    • In a small bowl, mix the olive oil with the remaining herbs. Rub this mixture all over the outside of the chicken.
  5. Optional Vegetables:
    • If using, place chopped vegetables in a roasting pan around the chicken. Drizzle them with a bit of olive oil, salt, and pepper.
  6. Roast the Chicken:
    • Place the chicken breast-side up in the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  7. Rest:
    • Remove the chicken from the oven and let it rest for about 10-15 minutes before carving. This helps keep the meat juicy.
  8. Serve:
    • Carve the chicken and serve it with the roasted garlic and vegetables. Enjoy!
