Kielbasa and Potato Soup

Discover a soup that will capture your heart—Kielbasa and Potato Soup. Bursting with slices of sausage featuring a delightful crispiness, tender and fluffy potatoes, complemented by the savory trio of celery, carrots, and onions.
Ingredients:
1 pound Kielbasa sausage, sliced
2 cloves garlic, freshly minced
1 tablespoon olive oil
1 small yellow onion, diced
½ cup celery, finely sliced
2 large carrots, peeled and diced
4 cups chicken stock
1 ½ pounds potatoes, diced
½ cup Parmesan cheese, shredded
2 cups milk
2 cups Cheddar cheese, shredded
1/4 cup parsley, roughly chopped
Salt and pepper to taste

First Step:

Heat olive oil in a large Dutch oven or soup kettle over medium-high heat.

Add sliced sausage and cook for 5 to 6 minutes.

Remove the sausage from the Dutch oven and set aside.

Second Step:

In the same pot, add diced onion, minced garlic, carrots, and celery. Cook for 2 minutes.

Pour in chicken stock and add diced potatoes.

Bring to a boil, then reduce heat to medium-low, cover, and cook for 15 minutes.

Third Step:

Return the cooked Kielbasa to the pot. Add milk, Parmesan cheese, and Cheddar cheese. Season with salt and pepper.

Stir well and cook for an additional 10 minutes over medium-low heat until the cheese has melted.

Remove from heat and garnish with chopped parsley.

Serve immediately and savor the goodness!
