Apple Slab Pie

Here’s a simple recipe for Apple Slab Pie—a larger, sheet-pan version of apple pie perfect for serving a crowd!

Ingredients:

For the crust:

•2 ½ cups all-purpose flour

•1 teaspoon salt

•1 tablespoon sugar

•1 cup cold unsalted butter, cubed

•½ cup cold water (add ice cubes for extra chill, then remove ice)

For the filling:

•8 cups peeled, cored, and thinly sliced apples (about 8 large apples, preferably Granny Smith or Honeycrisp)

•¾ cup sugar (adjust according to the sweetness of apples)

•1 tablespoon lemon juice

•1 teaspoon ground cinnamon

•¼ teaspoon ground nutmeg

•¼ teaspoon salt

•2 tablespoons all-purpose flour

•1 tablespoon butter, cut into small pieces

For the topping:

•1 egg, beaten (for egg wash)

•1 tablespoon coarse sugar (optional)

Instructions:

1.Make the crust:

•In a large bowl, whisk together flour, salt, and sugar.

•Add the cold, cubed butter, and cut it into the dry ingredients using a pastry cutter or fork until the mixture resembles coarse crumbs.

•Slowly add the cold water a tablespoon at a time, mixing until the dough begins to come together. Form it into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

2.Prepare the filling:

•In a large bowl, toss together sliced apples, sugar, lemon juice, cinnamon, nutmeg, salt, and flour until well combined.

3.Assemble the pie:

•Preheat your oven to 375°F (190°C). Grease a 10×15-inch rimmed baking sheet or jelly roll pan.

•Roll out one disk of the dough into a large rectangle, slightly larger than the baking sheet. Transfer it to the pan and press it into the bottom and sides, allowing the edges to hang over slightly.

•Spread the apple filling evenly over the dough, and dot with small pieces of butter.

•Roll out the second disk of dough and place it over the apples. Trim any excess dough and crimp the edges together to seal.

•Brush the top with the beaten egg and sprinkle with coarse sugar, if using.

4.Bake:

•Cut a few small slits in the top crust to allow steam to escape.

•Bake for 40-45 minutes, or until the crust is golden and the filling is bubbling.

5.Cool and serve:

•Allow the pie to cool before slicing into squares. Serve warm with ice cream or whipped cream, if desired.
