Pork Tenderloin with Bacon and Brown Sugar

Here’s a flavorful recipe for Pork Tenderloin with Bacon and Brown Sugar—a perfect combination of savory and sweet!

Ingredients:

•1 pork tenderloin (about 1-1.5 lbs)

•6-8 slices of bacon (thin-cut)

•½ cup brown sugar

•1 tablespoon Dijon mustard

•1 teaspoon garlic powder

•½ teaspoon smoked paprika (optional)

•Salt and pepper to taste

•1 tablespoon olive oil (for searing)

Instructions:

1.Preheat the oven:

Preheat your oven to 375°F (190°C).

2.Season the pork tenderloin:

•Pat the pork tenderloin dry with paper towels. Season it generously with salt, pepper, garlic powder, and paprika (if using).

•Rub the tenderloin with Dijon mustard to help the seasonings stick and to add flavor.

3.Wrap with bacon:

•Lay out the bacon slices on a cutting board, slightly overlapping them. Place the seasoned pork tenderloin on top of the bacon.

•Carefully wrap the bacon around the pork, tucking the ends underneath to secure the bacon in place.

4.Sear the tenderloin:

•Heat the olive oil in a large, oven-safe skillet over medium-high heat.

•Once the oil is hot, place the bacon-wrapped pork tenderloin in the skillet, seam-side down. Sear the bacon until it’s golden brown and crispy, about 2-3 minutes per side.

5.Add brown sugar:

•Once the bacon is crispy on all sides, remove the skillet from the heat. Sprinkle the brown sugar evenly over the top of the bacon-wrapped pork.

6.Bake the pork:

•Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C). The bacon should be caramelized with the brown sugar.

7.Rest and serve:

•Remove the pork from the oven and let it rest for 5-10 minutes before slicing.

•Slice the pork tenderloin into medallions and serve with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.

Enjoy the sweet and smoky flavors of this Pork Tenderloin with Bacon and Brown Sugar!
