Slow-Cooked Beef and Noodle Soup

    Ingredients:
    2-3 pounds beef roast
    1 can (14 oz.) reduced-sodium beef broth
    1 envelope (from a 2.2 oz. box) beefy onion soup mix
    1 can (10.5-10.75 oz.) cream of celery or mushroom soup, undiluted
    3-4 cloves garlic, minced
    6-8 cups beef broth or water, more if desired
    1 package (24 oz.) frozen home-style egg noodles
    Salt and pepper, to taste
    Directions:
    In a large bowl, mix together the 14 oz. can of beef broth, beefy onion soup mix, cream of celery or mushroom soup, and minced garlic. Set this soup mixture aside.
    Place the beef roast in a 5-quart (or larger) slow cooker. Pour the previously prepared soup mixture over the roast.
    Cover the slow cooker and cook on LOW for 8 hours or overnight, until the beef shreds easily with a fork.
    In the morning, shred the beef apart in the slow cooker, then add 6-8 cups of beef broth or water. Cover and continue cooking on LOW for an additional 8 hours.
    An hour before serving, stir in the frozen egg noodles, salt, and pepper to the slow cooker. Increase the heat to HIGH and cook for an additional hour, or until the noodles are tender.
