FOR MAKING MY TRADITIONAL « SOUTHERN FRIED CHICKEN » RECIPE, YOU’LL NEED THE FOLLOWING INGREDIENTS:
1½ Cups.Of whole milk.
2 beaten eggs, large-sized.
2½ Cups.Of all-purpose flour.
2 large spoons.Of salt, plus more if desired!
2 large spoons.Of black pepper.
Bone-in chicken pieces, I used 4-ounces.
Canola oil, for frying.
INSTRUCTIONS:
1st Step:
Gather all of the necessary ingredients, heat the oven to 200 degrees Fahrenheit and arrange a rack in the bottom of a big baking pan.
2nd Step:
In a medium-sized mixing basin, whisk together the milk and eggs. To ensure a smooth mix, whisk the ingredients together well.
3rd Step:
Combine the flour, 2 tbsp of salt, and pepper in a large heavy-duty zip-lock food storage bag and shake until well combined. Seal the container and shake it to combine the ingredients.
4th Step:
Dip the chicken pieces in the milk and egg mixture, allowing any excess to drop back into the dish, and set aside. Place the pieces that have previously been dipped on a platter until you have three or four.
5th Step:
Toss the dipped chicken pieces into the bag of seasoned flour and shake to combine. Seal the bag and shake to fully coat the chicken pieces. Remove the chicken pieces to a dish and continue the process with the other chicken pieces.
6th Step:
Heat the oil in a large, heavy skillet over medium heat until it reaches 350 degrees F. Set aside a big serving platter lined with paper towels while the chicken is cooking up.
7th Step:
Fry the chicken in batches, a few pieces at a time, for approximately 10 minutes on each side, or until it is golden brown and cooked through.
8th Step:
With a slotted spoon, transfer the cooked chicken pieces to a tray lined with paper towels so that they may drain. Sprinkle with additional salt if desired.
NOTE 1:
Make sure not to put too many chicken pieces into the pan at once, even if they can all fit comfortably, since this will cause the temperature of the oil to decrease significantly, reducing the crispiness of the final result.
NOTE 2:
Keep in mind that chicken breasts will cook in slightly less time than dark-meat chicken pieces
